Egyptian Pumkin Dessert

Really satisfying and sweet, this is a dessert that i eat once a year because its special. I love making this whenever I have pumkin.

Ingredients.
1 pumkin
3 cups of milk
3 tablespoons of flour
1/2 stick of butter
2 cups of sugar
handful of raisins
handful of decicated coconut.

feel and dice pumkin. Bring a pot of water to boil and add pumkin with one cup of sugar. Boil until tender then set aside. In a seperate pot melt butter on low heat. Once melted add flour, turn the heat to medium and and mix for 2 minutes. Using a whisk, add 3 cups of milk, whisking vigouslry then add 1 cup of liquid of from the pumkin. Add sugar and Mix until you have a smooth creamy texture. If its too thick you can add more milk or liquid from the pumkin. the consistency should be like a custard.

Take a medium sized baking dish and place pumkin down the bottom. mash gently with fork and sprinkle generously with sugar, raisins and coconut. Cover with custard mixture, and bake in a hot oven at 180 degrees until the top is golden. Leave to cool completely overnight, in the fridge before you serve.
